I've heard rumors there is workflow/staging available now in the text/html module, but I haven't been able to find anything further on it.  text/html isn't on the Forge listing, the documentation I've been able to find hasn't said anything about it, and to be honest I can't even figure out where the text/html module download is (mostly because it's not in the Forge listing...). 

Any thoughts or direction on where I can find more information, or even figure out if I have the right version?

The Text/HTML module is included in the latest releases of DotNetNuke, and requires newer versions of DNN. I would start by upgrading your site (after backing things up). Then you can go to the Module Settings of the HTML module to enable workflow. The Pro version of DNN has a more advanced HTML module that allows you to create custom work flows, in CE it isn't customizable.
