Are there any javascript files in the DNN 7 js directory (or anywhere else) that would be having some kind of control over line height in my templates or skins? If not, any other files apart from the usual template/skin/css files.

Not so much JS files - but the default.css or portal.css of the underlying core might be having some sort of effect.
I would start using the chrome/firefox developer tools to explore the underlying styles being applied to each element.
Have a look specifically for div spacing and p spacing.
