I've looked all over the place for the past couple of days, but I can't seem to find a good answer to this.

I know that you can use profile properties in the template definition for the member directory.  For Profile property names that are not just one-word entries, how do you determine what to use in the template?

Example:  I have a profile property named "Telephone".  If I use ProfileProperties().Telephone in the template, I see the phone number displayed.  I have another profile property named "Position Title", but ProfileProperties().PositionTitle doesn't show anything, nor does ProfileProperties().Position_Title.

Is there some specific format to use or some pattern for translating the name of the profile property into a token?

I have not tested, but from some reading, it looks like you can access it as an array instead of with dot notation. So:
data-bind="text: ProfileProperties()['Position Title']" may work.

did you name the property including a blank or are you just using a blank in the caption - please check in property definition in Site Settings.
