Hello,
how can we change the value of the submit button, please? I seem to remember it can be done in the module resource file, but what if there is more than one form on the site with different submit text? I am running a relatively old version, I suppose, 5.1.3.

 Yes, you would have to edit the modules resource files.
A limitation of that this is either per install or per portal, not for a specific module.
I have changed the text using JS in situations like this and but I don't know of any other option.
