The new 7.3.3 will not allow us to add more than one subdomain and we need to have more than one.  How can we roll back to 7.2.x until DNN fixes this issue?

AFAIK, the only option is to recover from a backup that you would have made BEFORE applying the upgrade.

There is a known issue with portal aliases, you should be able to create the new site using a child website and edit the domain in the database (table PortalAlias).
There is no downgrade option included with DNN.
